How To Easily Make Homemade Ramen Noodles

  • 160mL water
  • 396g King Arthur bread flour (see note)

Instructions:

  1. To start, mix the baking soda and cold water in a wide bowl for a minute. Also, stir in the salt
  2. Add the wheat gluten and bread flour in the food processor before mixing for a minute on low to medium speed
  3. Next, increase the speed and gradually pour in the liquid while making it into a constant dough
  4. When all the liquid is in, mix for 30 seconds as it becomes smooth and then for more 30 seconds
  5. When done, take it aside and cover it with foil before resting for thirty minutes
  6. Knead the dough into a proper ball and cut it into two equal halves
  7. Wrap them in a bowl to reduce drying

How To Make Homemade Ramen Noodles

  1. Take the balls one at a time and roll them into one fifteen of the thickness with the help of your hands on a clean, smooth surface
  2. Next, take a pasta roller, take the flat noodle dough and start pressing it through the machine
  3. Do it for 3-4 times correctly and then roll over in half
  4. Repeat that two times before wrapping it in plastic and then after resting it for 30 minutes, repeat the process
  5. Take the dough and roll it over the pasta until it has the thickness of 1 mm
  6. Attach the spaghetti cut into the pasta machine and run the dough in it (make sure to dust flour or corn starch to prevent sticking before rolling)
  7. As the noodles come out in long threads, one needs to cut them after regular intervals.
  8. Once one, line them up and shake off the flour
