  • 1 cup of flour often called maida
  • Orange food color
  • 1 tbsp chickpea flour (known as besan)
  • 3 tbsp yogurt
  • 1/4 tsp of cardamom powder
  • Half a cup of water + 2-3 tbsp of water
  • 1/4 tsp baking powder
  • pinch of baking soda
  • oil or ghee to fry

Syrup:

  • 1 cup of sugar
  • Half a cup of water
  • 2 pinches of cardamom powder
  • 3-4 saffron strands
  • 1/2 tsp of lemon juice

  1. Take a large bowl or pot before combining the maida, baking powder, baking soda, and chickpea flour thoroughly
  2. Gently add in the yogurt and cardamom powder before pouring in the food color
  3. Stir and add the water slowly to make a nice smooth batter mix
  4. Make sure it’s not too thick and not to lose either which means adding around ¾ percent of the target water
  5. Cover the top and let the mix rest for up to 12 hours or overnight to ferment till tiny bubbles start to appear on top
  6. Once it is done, stir and pour in more water if it’s too thick
  7. Take a wide saucepan, toss in the sugar, water, and stir before placing it on medium heat
  8. When it starts to boil, toss in the saffron strands, lemon juice, and cardamom powder
  9. Stir and cook on low flame till it becomes thick and sticky but making sure that it doesn’t stick to the bottom
  10. To check if it’s done, pinch a bit of it between your fingers. Move them apart and see if it forms a long sticky thread
  11. Keep stirring and keeping it warm while you prepare the jalebi
  12. Take a squeeze bottle, and add the batter into it neatly. Make sure the tip of the bottle is small to make thin crispy treats
  13. Heat oil or ghee (whichever you’re using) in a large wide pan and heat it on medium heat

  1. Once everything is ready to start squeezing the jalebi into the oil in low medium heated oil
  2. Hold the bottle tightly and motion the bottle in a spiral/circular shape to make the jalebi especially unique
  3. Fry till crispy before dipping them in the warm syrup for 10 seconds
  4. Sprinkle nuts on top before enjoying hot!
